Potato Latkes with Smoked Salmon

Latkes are popular Hanukkah food.  I’m not Jewish, but let’s not quibble when tasty food is involved.  It’s Hanukkah season, and latkes went perfectly with this locally smoked salmon that I picked up.  I served creme fraiche on the side and also whipped up a simple Escarole and Radicchio Salad.  This was actually my first time making latkes, but they came out delicious - only 4 ingredients involved (potato, onion, egg and salt), so how can you go wrong?

Croissant Sandwitch
I’m a little late on posting this, but wanted to share this inspiring photo of a tasty sandwich.  I used leftover smoked salmon and leek dip from our St. Patrick’s Party (see my archive).  The dip went on a split, toasted croissant from Union Market, along with some ripe tomato slices.  On the side I made a simple salad of blue cheese tossed with roughly chopped watercress.  Delicious.
